Easter dinner will be today instead of on Sunday. My daughter has to work then. While shopping for groceries yesterday with her, she picked out a Lamb Roast for the main event for the dinner. Okay at almost sixty years old, I can truthfully tell you that I've never eaten Lamb of any kind. My parents never made it when I was growing up, nor did the ex wife after we got married. It, lamb just was never on the menu. I don't know if I'll like it? I don't know how to cook it, so it should be an interesting meal to say the least. I'm not doing the cooking by the way. I've made enough holiday meals and it's my turn to sit back and relax now. After all it is the first day off of work I've had in what? Over two years now. I'll help out with the cooking I'm sure, I always do. But this year I can be in "relax" mode for the most part. I'll need to pop over to the local sweets shop, get something for the family to indulge their sweet tooth with of course. We have pie for desert, but what's Easter with out a bit of Chocolate? I'm thinking some chocolate covered strawberries will do the trick. Everyone likes them. It isn't Easter yet, and the baskets won't be delivered till Sunday morning so... Woke up this morning with a hard on that wouldn't quit. My dream last night involved two women, and myself.. ( a unicorn I don't think I'll ever find )..needless to say but in the dream we were all having a very good time. Pity I had to wake up, as it was just getting interesting too. But isn't that always the case when your dreaming? The mind can only take you so far with the dream when you haven't ever experienced it in real life. Ah well..I can hope that someday it'll happen. Any who, I should Bunny hop into the shower, got to do a bit of cleaning round here before the family comes, and take a walk to the shop for the Strawberries.... Happy Easter people!

I love lamb...and my Easter dinner will be grilled rack of lamb. It is true, that lamb is an acquired taste. If you ever have a poorly prepped/cooked lamb, you'll probably never eat it again! Also...a poorly prepped/cooked lamb can stink up the kitchen/house babdly...leading to another major turn-off. First off...always buy spring lamb (very young). It is the best. Surprisingly, Sam's Club New Zealand lamb is always good. I've found the best way to cook leg of lamb is in an enamel coated cast iron dutch oven. Marinate the outside of the lamb with garlic and rosemary and a little olive oil. (other spices can be added and are taste dependent). Quickly braise the outside of the leg of lamb in olive oil on a frying pan to slightly brown the outside...about 1-2 minutes on each side. Place the leg into the dutch oven with potatoes cut into smaller pieces (and you can add the carrots directly into the dutch oven as well). Be sure to have a very light coating of olive oil on the bottom of the dutch oven...just a layer. Add 1 to 1-1/2 cups of water and then bake the dutch oven (with the lid) for about 3-1/2 hours at 375 degrees. Check the water level every 1 to 1-1/2 hours and add as needed. I promise, with this procedure, the lamb will pull/fall apart without having to use a knife! With the dutch oven, it's a easy one pot meal...and no smell. We're having Easter ham. And venison backstrap. I doubt I could get the girls to eat lamb. The boys will eat anything, LOL.
